As a side: Chop it up, sauté it in a pan with a tablespoon of olive oil, sea salt and pepper. Have it as a side with any meal!
In a smoothie: Chop up a handful and toss it in a blender with a cup of coconut water and a banana or any fruit of your choice! Drink it for breakfast!
As a salad: Chop it up really well, place it in a big bowl and massage it with olive oil, freshly squeezed lemon, and sea salt. Let it sit while you chop up the other veggies you want in your salad. It evens tastes great the next day because the lemon reduces the bitterness. I love adding avocado, carrot shreds, cucumbers, almond slices and slivers of red onion.
